Our all-time best seller, the Signature Bak Kwa is made using pork meat minced from the shoulder cut – a well-marbled cut that cooks well over charcoal fire. Each slice is made uniquely thin and the meat melts over the slow heat to release the flavours, giving the Signature Bak Kwa its tender texture and taste that all ages can enjoy.

For those who prefer a meatier bite, the Sliced Bak Kwa is a thicker piece of jerky with a firm and chewy texture. It is made with sliced meat (not minced) from the meaty pork leg. Temperature control is crucial when we cook the Sliced Bak Kwa; our Shifus have to grill it over a lower heat to ensure even charring while keeping the bakkwa still juicy.

As we do not use any preservatives in our bakkwa, it is best to consume the bakkwa within 5 days from packed date for freshness and best taste. Bakkwa should be kept tightly-sealed in dry ambient conditions away from heat / direct sunlight and moisture. Do NOT handle bakkwa with wet hands / utensils / containers.

For a longer storage of up to 2 weeks, bakkwa should be kept immediately and tightly-sealed in the chiller. Re-heat instructions can be found on the back of our bakkwa pack. Do not subject bakkwa to prolonged temperature change (such as removing from chiller and leaving it in room/outside temperature) as this can result in moisture due to condensation.

Being a perishable meat product with no preservatives, bakkwa will inevitably lose its freshness and spoil over time, compromising the taste, texture as well as food safety.

Since its days in the 1970s, Kim Tee has persevered with hand-making its bakkwa from start till end, including hand-slicing the bakkwa and hand-grilling each piece over a charcoal barbeque. Hence, it is inevitable that some pieces of bakkwa may not be in the perfect square shape and there may also be some charring due to the inherent uneven heat distribution when using a charcoal fire (as opposed to an electrical source of heat). Cooking our bakkwa with charcoal fire impart a characteristic aroma to the bakkwa that is not possible with electric means of cooking.
